The combination of strawberry gelatin and cream cheese ensures a luscious texture, making every bite a delightful experience.

This recipe is perfect for gatherings, celebrations, or just a sweet treat at home. It’s also a great make-ahead dessert; you can prepare it a day in advance and refrigerate until ready to serve.

What You’ll Need

Gather the following ingredients to make your cheesecake.

For the Crust

  • 1 lb vanilla cream cookies, about 34 cookies, divided
  • 6 tablespoons butter, melted

For the Filling

  • 1 small box, 3.3 oz, strawberry gelatin
  • 1 cup boiling water
  • 2 bricks, 8 oz each, cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 10 strawberry wafer cookies, about 4 oz

For the Topping

  • About half a small tub of whipped topping, thawed and placed into a pastry bag with a star tip

Note: Feel free to use low-fat cream cheese for a lighter version.

Substitutions & Swaps

  • Use chocolate sandwich cookies for a different flavor.
  • Swap whipped topping for homemade whipped cream.
  • Gelatin can be replaced with a no-bake cheesecake mix.

How to Make It

Get ready to create this delicious cheesecake with these simple steps!

Prepare the Crust

  1. Process cookies: Place 26 cookies into a food processor and process until they are fine crumbs. Add melted butter and process until crumbly with a wet sand-like texture. Press evenly into the bottom of a greased 10" springform pan to create the crust. Freeze for 15 minutes.

Make the Filling

  1. Dissolve gelatin: Combine boiling water and gelatin, mixing for 2 minutes until dissolved. Set aside to cool; do not refrigerate.

  1. Beat cream cheese: In a separate bowl, beat together cream cheese and granulated sugar until smooth. Set aside.

  2. Whip cream: In another bowl, beat heavy whipping cream and powdered sugar until stiff peaks form, scraping down the bowl once.

  3. Combine mixtures: Place half of the whipped cream mixture with the cream cheese and half with the gelatin. Beat the cream cheese until smooth and whisk the gelatin until smooth.

  4. Layer filling: Pour half of the strawberry mixture onto the crust. Freeze for 15 minutes. Remove from the freezer and add the cream cheese mixture, then top with the remaining strawberry mixture.

  5. Prepare crunch topping: Coarsely crush remaining vanilla cream cookies and strawberry wafers. You can coarsely chop with a tart shaper or place them into a sandwich bag, seal, and crush with a rolling pin. If desired, add a few drops of food coloring to the crushed cookies and mix to color. Mix cookies together and sprinkle on top.

  6. Chill: Refrigerate for 4 hours or until ready to serve. Before serving, top with whipped topping, if desired.

How to Store It

Fridge: Up to 3 days in an airtight container.
Freezer: No, the texture may change.
Reheat: Not necessary; serve chilled.

Tips for Best Results

  • Ensure cream cheese is softened for easy mixing.
  • Allow the gelatin to cool completely before combining with other ingredients.
  • Use a pastry bag for a decorative whipped topping finish.

Serving Suggestions

  • Serve alongside fresh strawberries or a berry compote.
  • Pair with a scoop of vanilla ice cream for an indulgent dessert.
  • Perfect for summer barbecues, birthday celebrations, or other festive occasions.
